Recipe: Mint Mojitooo!

Hint of Mint Mojito 




Ingredients:
10 fresh mint leaves
1/2 lime cut into 4 wedges
2 tblspns white sugar (or to taste)
1 cup ice cubes
1 1/2 fluid ounces white rum
1/2 cup club soda

Directions:
1. Place mint leaves and 1 lime wedge into a sturdy glass.
2. Use a muddler to crush the mint and lime to release the mint oils and lime juice.
3. Add 2 more lime wedges and the sugar, muddle again to release the lime juice.
4. Do not strain the mixture.
5. Fill the glass almost to the top with ice.
6. Pour the rum over the ice and fill the glass with carbonated water.
7. Stir, taste, and add more sugar if desired.
8. Garnish with remaining lime wedges and extra mint. 



Mint Mojitos are my absolute favorite next to margaritas! (: They're extremely refreshing and great for a backyard picnic or some lounging by the pool. You can definitely always add more rum if you'd like. Serve with some salsa and chips and you'll be set! Enjoy!

Margarita Madness!

Frozen Watermelon Margarita



ingredients: 
1 1/2 cup of sweet watermelon (or to your taste)
1 cup tequila
1/2 cup lime juice
1/2 cup orange liqueor
1-2 tablespoons sugar
1/2 teaspoon salt 
3 cups ice 

instructions:
puree all ingredients together
garnish with a wedge of lime and a watermelon slice
or even some mint!
you can put salt on the rim if you'd like but it's already added to the mix

serving size: 4 cups


I hope everyone enjoys! (: I love margaritas and the fact that they're a frozen treat on a hot summer day is great. It's perfect for BBQ's with friends or inviting friends over to sit and chat on a beautiful summer night. Remember, you don't have to follow the instructions exactly... and you can always add your own flair to everything!

Breakfast on my last weekend!

Made breakfast for my last weekend here. Today, I made toast with avocado and eggs (:

Ingredients:

2 slices of toast

1/2 of an avocado

1 hardboiled egg

salt & pepper


Divide the avocado and place onto the toast. What I did was mash the avocado to make it a nice spread over both of the toast. Next, I cut the hardboiled egg in half and continued to cut it into bite size pieces and placed them on top of the avocado spread. Next, I sprinkled salt and pepper on top. It's super quick and easy and great for you too! (:

Sweet Summer Time Smoothie



So lately, I've really been getting into smoothies for a light snack to tie me over until I can actually eat lunch or just something to pair with my breakfast. This is probably the easiest and fastest way to make a great smoothie that's healthy and delicious at the same time!

Ingredients:

Frozen fruit
 (I bought a tropical smoothie blend but there are berry mixes, etc to choose from)

Chocolate Milk

Basically, those are the two ingredients you'll need and then a blender! First, depending on how much of a smoothie you want pour in a few chunks of frozen fruit (I have a small single serve blender right now, so i fill it up maybe a little less than half way with fruit) then, pour in chocolate milk (i have 1% right now, but you can really use any type of chocolate milk or even soy milk/almond milk/etc). Pour maybe a little less than the amount of fruit you have. Then, blend until smooth! You may have to stir the mixture up a bit because sometimes the fruit gets stuck. Pour into a cup and its a little thicker than a normal smoothie, so you might have to use a spoon. 

Enjoy! (: This smoothie doesn't need any extra sugar or anything because the chocolate milk adds enough sugar to sweeten up the mixture. Yay! Super easy and super fast, this smoothie will definitely tie you over as a snack.
